Emily A. Callahan, MPH, RDN

Emily Callahan is the Founder and Principal of EAC Health and Nutrition, a consultancy that helps national health and science organizations evaluate and communicate research to educate stakeholders, shape environments, and advance policies to promote healthy eating and population health.

Emily primarily supports the Food is Medicine Institute at the Friedman School of Nutrition Science and Policy at Tufts University, serving as the Institute’s Director of Policy Strategy. In this role she helps plan and execute a strategic vision for informing and driving federal policy change across key priority areas.

Previously, Emily was employed by the American Heart Association and the National Academies of Sciences, Engineering, and Medicine in Washington, DC.

She earned a Master of Public Health degree from the University of North Carolina at Chapel Hill and a Bachelor of Science degree, summa cum laude, from Miami University in Oxford, Ohio. She has been credentialed as a Registered Dietitian Nutritionist since 2008 and is a member of the Academy of Nutrition and Dietetics and the American Society for Nutrition.
